INGREDIENTS

  • Rice (white, brown or basmati)
  • small red onion, cut into thin strips
  • Sautéed green asparagus
  • Avocado slices
  • Smoked tuna
  • Soy sauce
  • Rice vinegar (or apple cider vinegar)
  • Sesame oil or olive oil
  • Lemon juice (optional)
  • Salt and pepper to taste

PREPARATION

To prepare this rice salad, start by cooking the rice in salted water according to the instructions on the packet. Once cooked, drain and leave to cool. In a large frying pan, heat a little oil and sauté the garlic cloves until golden brown. Add the red onion and cook over a medium heat for about 5-7 minutes. Remove from the heat and allow to cool slightly.

Meanwhile, sauté the asparagus, then drain and set aside. For the sauce, mix the soy sauce, rice vinegar, sesame oil and lime juice in a small bowl; adjust the salt and pepper to taste. In a large bowl, combine the cooked rice with the red onion and sautéed garlic. Add avocado slices, smoked tuna and poached asparagus on top.

Finally, drizzle the salad with the prepared soy sauce and toss gently. Serve immediately or refrigerate a little to enjoy it cold and refreshing.

ADVICE

You can add some toasted sesame or sunflower seeds for a crunchy touch. For extra freshness, you can add fresh herbs such as parsley or chopped coriander.
