INGREDIENTS

  • Grated medium-sized potatoes
  • Egg
  • flour (you can use wheat or oat flour)
  • Melted butter or olive oil
  • Salt and pepper to taste
  • Minced garlic
  • Crème fraîche or crème fraîche
  • Freshly chopped chives
  • Smoked salmon with dill in strips or cubes
  • Lemon zest (optional)

PREPARATION

To prepare the potato waffles, peel and grate the potatoes, then dry them well with a clean tea towel or paper towel to remove excess water. In a large bowl, mix the grated potatoes with the egg, flour, melted butter (or oil), garlic (if you prefer), salt and pepper. Preheat a waffle iron and brush it with a little oil or butter, then place portions of the potato mixture and cook until the waffles are golden brown and crispy, about 6-8 minutes.

For the topping, mix crème fraîche with chopped chives and dill in a small bowl, add lemon zest, salt and pepper to taste, and stir well. Once the waffles are ready, place them on a plate and top each with a generous spoonful of crème fraîche. Top with dill-smoked salmon strips or cubes, and, if desired, garnish with additional chives, fresh dill or a slice of lemon. Serve the waffles immediately, with a light salad or as part of a brunch.
