INGREDIENTS

  • Noodles (rice noodles, udon or ramen)
  • Carrots cut into thin strips
  • Broccoli, cut into small florets
  • Soy sauce
  • Sesame oil (or olive oil)
  • Rice vinegar or lemon
  • Grated fresh ginger
  • Minced garlic
  • Hard boiled eggs cut in halves
  • Smoked salmon, thinly sliced
  • Wasabi pearls
  • Fresh chives or dill
  • Toasted sesame seeds

PREPARATION

To prepare the noodles, cook according to the instructions on the packet, drain and set aside. In a large frying pan or wok, heat the sesame oil over medium heat. Stir-fry the garlic and ginger (if using) for one minute, then add the broccoli florets and stir-fry for 3-4 minutes, until tender-crisp. Add the carrot strips and cook for a further 2 minutes. Pour the soy sauce and rice vinegar over the vegetables, mix well and cook for an additional minute. Add the cooked noodles to the pan and stir to absorb the flavours of the sauce and vegetables.

To assemble, serve the noodles and vegetables on a plate or bowl, place the sliced hard-boiled egg on top of the noodles along with the smoked salmon slices and add the wasabi pearls for a special touch. If desired, garnish with fresh chives, dill or toasted sesame seeds for added flavour and texture.
