PREPARATION<\/h2>\n\n\n\n

To prepare the potato waffles, peel and grate the potatoes, then dry them well with a clean tea towel or paper towel to remove excess water. In a large bowl, mix the grated potatoes with the egg, flour, melted butter (or oil), garlic (if you prefer), salt and pepper. Preheat a waffle iron and brush it with a little oil or butter, then place portions of the potato mixture and cook until the waffles are golden brown and crispy, about 6-8 minutes. <\/p>\n\n\n\n

For the topping, mix cr\u00e8me fra\u00eeche with chopped chives and dill in a small bowl, add lemon zest, salt and pepper to taste, and stir well. Once the waffles are ready, place them on a plate and top each with a generous spoonful of cr\u00e8me fra\u00eeche. Top with dill-smoked salmon strips or cubes, and, if desired, garnish with additional chives, fresh dill or a slice of lemon.
