RECIPES SKANDIA SMOKED
Cod and salmon tartar, avocado soup and pickled jalapeños and roe.
INGREDIENTS
- 1 pack of salmon and cod tartare
- radishes
- pickles
- capers
- sprouts
- 75 ml of mineral water
- 2 avocados
- 1 fresh jalapeño with seeds and stems removed
- 1 lemon
- salt and pepper
- extra virgin olive oil
- Skandia salmon roe
- 15 g red onion in very small cubes
PREPARATION
In a bowl, mix well the Skandia tartar with a few drops of extra virgin olive oil, add the finely chopped onion and set aside.
For the avocado and jalapeño soup
Place the avocado, lime juice and fresh jalapeño in the food processor and season with salt and pepper. Grind at maximum speed and add the water little by little until a smooth and homogeneous soup with the desired texture is obtained. Cool and reserve.
Cut some slices of gherkin and radish.
ASSEMBLY
We make a circle on a plate with the tartar, in the center of which we place the avocado and jalapeño soup and decorate with the slices of radish and pickled gherkin. On top of the soup, place the salmon roe, add some sprouts on top of the tartar and serve.
